It's The Time You've All Been
Waiting For!
As we anxiously wait for the temperatures to cool off, baseball to wind
down and a certain Presidential election to intensify, there are still
plenty of things happening at your local brew pub. Please, allow
me to elaborate.
Now that the opening week of the NFL season is behind us, let's
concentrate a little more on our ASU Football team. With two
victories under their belt and another big game this Saturday against
UNLV, we
feel compelled to remind you to stop by on your way to the game.
Remember, Happy Hour is from 3 p.m. to 7 p.m. daily to get you started
and six packs ($6.99) and cases ($24) of Kilt Lifter and 8th Street Ale
are always available to keep the party going. For all you hop
heads out there, feel free to stop by to get a 64 oz. growler of Hop
Knot, Raj I.P.A., or almost anything else for $14 new or $9
refills. Be the hit of the tailgate party by bringing one of your
local favorites along! Then be prepared for the BIG game of the
month... Georgia on September 20th!
This ought to be one of the busier weekends of the '08-'09 college
sports year! Don't believe me? Even the Atlanta
Journal-Constitution was writing about it and us! Check
It Out!

We are also about to embark on the most
eagerly anticipated "seasonal season" of the
year with the unveiling of the Hoof Hearted Belgian Wit.
Described in greater detail later in this Brewsletter, we invite you to
stop by and enjoy one. Come in, have a pint, and take some home
in a growler if you like!
This week our Brewers weigh in on the upcoming election by posing the
question, "Who would you enjoy having a beer with
most?" It really puts into perspective what we actually
(should) look for in a candidate when all is said and done.
Also this week, Grill and Tap happenings with Sassy Scottsdale Story
Spinner Karina Lange and we pose a few questions to Sunday's

Five Questions....
In the same vein as "Better Know A..." from the past couple
of issues, I feel it would be interesting to open up the floor to one
random Four Peaks employee each week. Being that this is Phoenix and
there is a huge transient population, we are proud to have quite a
diverse group of go-getters working for us at Team Four Peaks!
Almost everyone is from somewhere else in this great American
experiment we call the U.S.A. and all have something to say. So
without further ado, this week will be challenging the young wunderkind
Trevor Schultz, native Minnesotan, dart tosser, and all-around nice
guy, with a new volley of 5 random questions...enjoy!
The Questionnaire
1.
You've just ordered 8th Street Ale Chicken Strips and Fries, what
dipping sauces do you use? And why?
I like to use the BBQ and Buffalo sauce. I dip into the Buffalo
first than double dip into the BBQ.
2. It's 110 degrees outside, where is the coolest place in
the brewery?
I like to think it's in the Taj Mahal. The "Taj" is the
bathroom in the game room area. To my knowledge it is the only air
conditioned place in the brewery.
3. Since you are from Minnesota and we have a huge Viking
following, who is your favorite musical artist from the homeland?
I have thought about this question for many moons. I am going to
go with Robert Zimmerman (editor's note: Bob Dylan for the
uninitiated). Best. Voice. Ever.
Summer days and the
summer nights are gone
I know a place where there's still somethin' going on
This was hard. So many ways to go. Prince is a very close second
in my eyes.
4. Your choices are "America's Got Talent" and
"Dancing with the Stars." Which one would drive you to drink
first?
Well I like to drink while watching "Dancing with the
Stars."
She (Julianne Hough, pictured right) also helps. Helps a
lot. Make sure to tune in this season when it gets sexier
with Susan Lucci.
5. Seeing as your surname is Schultz, same as one of our
esteemed owners, how has his rugged "mountain man" facial
hair inspired you?
It appears to me that Cousin Randy is getting ready for the upcoming
winter. From the looks of it, it's going to be a cold, harsh
winter. And Randall is ready.
Well played, Trevor, well played indeed. It's nice to know there
are other gauges in this world in regards to forecasting the
weather. For some it's The Farmers Almanac, for my mom it was the
Laura Ingalls Wilder book, "The Long Winter", whilst here in
Tempe, we just check out facial hair length in the month of September.

CASK AND YE SHALL RECEIVE
You Guys are insatiable! I have got to hand it to all of
you. Due to the overwhelming response to our 8th Street Ale on
cask, we've decided to give it another go around at both locations this
week! That's right, available at both locations right now that
infamous English-style Best Bitter is ready to be hand drawn fresh,
just for you...I know where I'm going to be, won't you join me?
IN TEMPE THIS WEEK
8th Street Ale: It's like our award-winning English Style
"Best Bitter" was made for cask conditioning. Mellow
bitterness and a slightly sweet malt flavor accompany a heavenly hop
aroma derived from lots and lots of rare imported Kentish hops. 4.5%
Alc./Vol.
Hop Knot IPA: In the event we run out of 8th Street, we have
the true American original and the Four Peaks regulars favorite.
This baby has got all American hops, and, as legend has it, walked the
beaches of Normandy on D-Day preserving freedom with its special brand
of "blitz-keg" assault!
IN SCOTTSDALE THIS WEEK
8th Street Ale: Lovingly concocted by the skilled artisans
from your local brew pub! Each hop is lovingly blessed with a
little something we call "mojo" before entering the brew
kettle, just thought you'd like to know.

The
Seasonals, They Are a'Changin'
Although summer has begun to wind down our outstanding brew staff is
just beginning to heat up! As we slowly approach what is arguably
the most anticipated seasonal offerings of the year (Pumpkin Porter
anyone?), we are kicking off the fall seasonals with our Hoof Hearted
Belgian Wit! Having almost as many aliases as Fletch (Yeah, I
know you still enjoy watching that movie, don't lie to yourself!), it
is also known as Witbier, Biere Blanche, Belgian White, or simply, Wit
depending on where in the world you live.
According to our website and esteemed brewer-ship, our interpretation
is as follows:
Our version of a Belgian Wit is called "Hoof - Hearted Wit,"
and is brewed to style with dried bitter and sweet orange peel and
coriander seeds. Similar to a Hefeweizen with respect to the cloudiness
of the beer and some phenolic (clove) and tart flavors, Wits should
have white, rocky head when poured and should be almost white in
appearance - hence the name.
Believe it or not, there is a rather interesting history that goes
along with this Belgian style craft ale. It actually appears to
be descended from a myriad of Medieval beers which, due in no small
part to this epoch of time being referred to as The Dark Ages, were not
brewed with hops at all. True, instead our clever ancestors
needed to utilize various local spices, fruits and other indigenous
plant life for flavor and preservation! Pretty crafty, eh?
As with most of the other styles of beer, it was almost lost to history
in the late 19th Century as a result of the rise in popularity of
lagers. But we are proud to bring it back for you to enjoy as the
summer heat begins to wane.

Brewers Blog XIV:
Cocktailing With The Candidates
We know some people think it's completely taboo to discuss politics
or religion in a bar, but here's a fun political question, "Who
would you rather have a beer with?"
It's otherwise known as the "likeability test" and it made
big news in 2004 with W beating John Kerry by 57 percent of those
polled, the irony being that W doesn't drink. Oh well.
So it's on to this year's crop of candidates and, of course, since it's
our blog and it seems that every other schmoe on the street has an
opinion, here's ours:
Let's take John McCain. We're certain he would have some amazing
stories to tell, most veterans do, and those Hanoi Hilton stories would
be fascinating enough to have more than one beer. The problem is
Cindy. She owns one of the largest Anhueser-Busch-Belgo-Brazilian
distributorships in the US which means John would order Buds, or maybe
Stella, and we'd feel obligated to join him (he IS buying, right?).
Regardless, he would be interesting.
Sarah Palin, McCain's running mate, would be even more intriguing in
our estimation. We've never stalked caribou, nor have we worked on a
commercial fishing vessel. We don't have five kids and our spouse isn't
a snowmobile racing champion when he's not working the northern
oil-fields. We think it would be like having a beer with those earthy
boat captains from The Deadliest Catch. Tell us those stories
wouldn't be fun. And besides, they probably would drink Alaskan Amber.
Check that, make it one Alaskan IPA, Sarah's got to go run a marathon
or field-dress a moose or something.
Barack Obama, too, would be a heck of time. Wouldn't it be nice to
actually get to know him? He seems a bit distant or guarded to us but
isn't that the reason for having a beer with someone, to close that gap
and find out their past? He's obviously likeable and passionate
about issues; we'd just like to have the beer to prove it.
Barack did sit down in some steel-town bowling alley recently to have a
beer with some supporters. Here's the Politico report:
"You know I got a beer down there," Obama said to a male
patron. "What do they call it? A Yuengling?"
.
"Yuengling," the man confirmed. "Like you didn't
know."
.
"Trying a Pennsylvania beer, that's what I'm talking about,"
said Obama, his sleeves rolled up, smiling. "Is it expensive,
though?...Wanna make sure it's not some designer beer or
something."
Kudos for drinking local, Barack, but it was probably just a free beer
- not a class war. We'll work on that. Regardless, having a beer with
him would be great. One request, can Michelle come? That'd be a
real fist-bumpin' hoot.
And then there's Joe Biden. Now come on, the guy's been in the Senate
since the dawn of time. He knows everybody and, presumably everything
that goes on in Washington. Plus, he likes to talk. And talk. Add a few
beers and it's conceivable that you would have more dirt than the
Enquirer. For political junkies like us, that's a dream.
OK, so who will win the likeability test? We don't have a clue.
Apparently we'll drink with anyone. Here's what we'd like to see,
though; let's get them all together for a beer.
Oh God, roll the camera...

The
start of the football season has come, and my, my what a turn
out! I don't know where some of you have been hiding, but it's
about time you came out!
Sunday marked not only the start of the football season, but also the debut of our new Bloody Mary
Menu. Along with our witty banter, Amy and I mixed, poured, and
served up four different types of Bloody Marys, all uniquely different
with an assortment of appetizing garnishes such as blue cheese stuffed
olives and shrimp. The Grill and Tap is definitely the place to be if
you're looking to spur your favorite football team on to victory while
sipping one of our tasty ales, Bloody Marys or delicious Mimosas.
Speaking of tasty ales, our Endless Summer Ale has come and gone, which
might seem contradictory as it is called "The Endless Summer
Ale." (They DO say all good things come to an end.) Rest assured
friends, another seasonal is making its way to our taps! The Belgian
"Hoof-Hearted" Wit will be out September 12th, so mark your
calendars.
Beer and cheese lovers, this is for you! We're switching our beer and cheese tasting from
every Wednesday to just once a month. While you won't be able to taste
the delicious goodness every week, you will however be happy to hear
that it's only getting bigger and better. No more will be there be only
three cheeses and three beers, but rather a full sample tray of our
Four Peaks Ales paired perfectly with eight different cheeses. The next
beer and cheese feature will be October 8th, so make your reservations
now by calling the Four Peaks Grill and Tap at (480) 991-1795.
Cheers!

Coming Up In The Next
Brewsletter...
Well, that just about wraps up another week of upcoming events, things
to do and places to go. As for next week, be prepared for a special
article from the Four Peaks Cavalry who will be venturing into the
great unknown of Telluride, Colorado for the Brews and Blues Festival.
We all look forward to reading that one (can the written word be
slurred?). Also, five new random questions will be posed to another
unsuspecting co-worker, more news from the Grill and Tap, the Brewers
Blog turns 15, and I'll be finding new and interesting ways of bringing
joy to the masses!
GO DEVILS!!!

to be thoroughly sure."
