Four Peaks might be known for beer, but we still know how to make a damn fine cocktail. Join us for a pairing dinner featuring five cocktails perfectly paired with five exquisite dishes. The full menu:

Reception: Bitter

The Cocktail: Hop Knot Collins

The Dish: Herb-rubbed crostini, kumquat compote, foie gras pate, micro parsley

Palate Cleanser

Campari Sorbet

Appetizer: Salty

The Cocktail: Spicy Salty Loma

The Dish: Sesame red snapper, daikon & carrots, sesame oil, garlic ponzu sauce, green onion, tobiko

Salad: Sour

The Cocktail: Blood Orange Martini

The Dish: Grilled figs, goat cheese, crispy prosciutto, toasted sunflower seeds, pickled shallots, spinach and arugula, blood orange balsamic reduction

Entrée: Umami

The Cocktail: Four Roses Manhattan

The Dish: Pistachio-crusted rack of lamb, wild mushroom demi, parsnip puree, roasted summer squash ribbons

Dessert: Sweet

The Cocktail: Marshmallow Martini

The Dish: Graham cracker crust, Oatmeal Stout chocolate pudding, housemade toasted marshmallows, chocolate sauce
